Slimming World Sunday - Super Speed Soup!

As the wedding gets closer, I've been wanting to ramp up the weight loss as best I can without feeling like I'm on a diet, and at a launch recently I had the chats with Aisling from Total MakeUp Addict who mentioned this Super Speed Soup she'd been loving.  It was just the bit of inspiration I needed, so once she filled me in on the ingredients, I hoofed myself over to Tesco at lunch time the following day to get everything because I knew I'd end up being exhausted after work and making excuses not to go.


Ingredients
  • 1 onion
  • 2 peppers (I hate green peppers so used a yellow and red one)
  • 2 parsnips
  • 2 leeks
  • 4 carrots
  • Mixed herbs (I wasn't sure whether to get dried or fresh herbs, so I bought both)
  • 2 tins of chopped tomatoes
  • 1 tin baked beans
  • 1 tin mixed bean salad
  • 1 tin green lentils
  • A handful of split lentils
  • 2 ham stock cubes
  • Water to cover



I plonked everything into my biggest stew pot and it all barely fit!  So I knew that either a) I'd be eating this for a long time or b) I'd be throwing out a lot of food if I didn't like it!  I let it simmer for about 30 minutes and then took a serving out and put it into a smaller pot because I'm not a fan of really chunky soups, so wanted to see what I was working with before blitzing it a smidge with my hand blender.  I wanted to still have some of the chunky texture so was very light handed with the blender.  And voila!



A tasty, hearty soup!  It lasted for ages in the fridge and each day I'd heat up a big bowl of it, smug in the knowledge that I was doing my insides a bit of good.  On days where I wanted something a bit more, I'd cook some pasta and add it in.  Towards the end of that massive batch, I wanted something different, so one day when I was heating it up, I added some curry powder into it and then half a packet of the Uncle Ben's rice that you microwave for 2 minutes.  And this was my favourite way yet to have the Super Speed soup!


I'll definitely be making this again and it was cheap, easy to make, and helped with the weight loss that week!

  1. Can you taste the baked beans? I effing HATE them so much, but the soup looks so lovely and chunky. Baked Beans give me the absolute creeps, a bitch of an Aunt tried to force-feed them to me when I was about 5 and I've never gone near them since :/

    1. The baked beans will just give a thickness to the soup and you shouldn't taste them at all if you blitz the soup nice and smooth you'll be grand ! Also I can't wait to get a batch of this going...
